Steamed Cup Cake

Steamed Cake is always served as Chinese Dim Sum.  It has a moist and chewy unique texture.  No icing nor glazes are used in the cake, you can experience the true taste of the egg in the cake.
Ingredients:
·         3 Eggs
·         90 g Sugars
·         90 g Cake Flour
·         Few drops Vanilla Extract
·         1/8 tsp Salt
Preparations:

1.        Place a clean mixing bowl over a hot water bath, don’t let the bottom of the bowl touches the hot water.  Beat eggs and sugar together until the ribbon stage, when the beater is lifted, the mixture falls in a wide band onto the surface, foaming a ribbonlike pattern that stays for 5 seconds.

2.       Add a few drop of Vanilla Extract.  Combine the salt with flour. 
3.       Sift the flour into the egg mixture, 1/3 at a time.  Fold in gently.
4.       Divide batter into 8 silicon baking cup.  Line baking cup in steamer.  Steamed for 8 - 10 minutes or a toothpick inserted in the center comes out clean.
