White Toast Bread (Utane starter / Water roux starter)

I always want to make white bread like those bought from store, but are not success until I read about Utane starter (Water roux starter). The freshness of the bread last for a few days, all it need is to reheat in the microwave for 20 minutes.


Yield: Makes one 1.5 lbs loaf

Ingredients:
· 146 g Milk
· 117 g Utane Starter
· 30 g Sugar
· 7 g Salt
· 8 g Instant Dried Yeast
· 356 g Bread Flour
· 11 g Milk Powder
· 30 g Cultured Butter

Preparation:
1. Add all ingredients except Butter into a mixing bowl. Attach bowl and dough hook to mixer. Turn to low speed and mixed for 1 minute.
2. Continue with medium speed until a dough forms. Gradually add the butter and knead until the dough is smooth and elastic. Dough will be slightly sticks to the touch. The dough should pass the windowpane/membrane test.
3. Place the dough in the lightly greased bowl, turn to grease top. Cover. Let it proof for 1 hour or until it’s doubled in size.
4. Punch dough down to release gas and shaped it into a baking pan. Let it proof for 1 hour or until doubled in size.
5. Baked at 350C for 35 minutes, or until golden brown. Remove from pan immediately and cool on wire racks.

Tips:
1. Let the bread cool for 10 minutes before slicing it.
2. If you made bread more than you can finish in 2 days. Store the extra portion in the freezer. When it’s ready to eat, heat it up in the microwave for 20 seconds. It’s going to taste like it’s freshly come out from the oven.
